Ensalada Navideña: Christmas Salad



– 1 1/2 cups Real California Crema Mexicana – 1 cup Real California Whole Milk Yogurt Plain – 1 can Real California sweetened condensed milk – 1 (20 oz.) can of pineapple chunks, reserve liquid from can – 4 apples (2 red, 2 green), cut into cubes – 1 ½ cups green grapes, cut in half – ½ cup red seedless grapes, cut in half – 1 lbs. strawberries, cut in half – 2 navel oranges, peeled and cut into 2 inch chunks – 1 cup sweetened shredded coconut, divided – 1 cup pecans, halved – 1 cup mini marshmallows :Crema, Fruit Salad, Christmas, Navideña, Nuts, Pecans, Hispanic Dairy

Yield: 12 servings

In a small bowl whisk Crema Mexicana, yogurt, sweetened condensed milk, and pineapple juice from can together until combined. Set to the side.

In a large mixing bowl combine pineapple, apples, grapes, strawberries, oranges, ½ cup coconut, pecans, and mini marshmallows together until fully mixed.

Place mixed fruit in a large serve bowl or trifle bowl, then pour creamy mixture over the top of mixed fruit.

Sprinkle top with ½ cup coconut and serve chilled.
