Chaffles (Cheese Waffles)



– 1 large egg – 2 tablespoons all-purpose flour, almond flour, or coconut flour – 1/4 teaspoon baking powder – 3/4 cup shredded Real California mozzarella or other semi-hard cheese

Cook time: 6 minutes, plus time for chaffles to cool

Preheat a waffle maker according to the manufacturer’s instructions. In a medium bowl, whisk together egg, flour, and baking powder. Stir in cheese.

Divide batter between two waffles on the waffle maker, spreading it evenly to the edges and corners. Cook until golden, about 3 minutes. Carefully remove chaffles and set aside to cool and crisp up. Makes 2–4 chaffles, depending on the size of waffle iron. Serve with maple syrup and butter, sour cream and chives or use to make an egg, tomato and avocado breakfast sandwich.
