CA Sweet Potato Rounds with Blue Cheese: Paired with Cabernet Sauvignon

Ingredientes:

– 1 large or two small California sweet potatoes – 2 tablespoons olive oil – 1/4 teaspoon fine sea salt – 4 ounces Real California blue cheese – 1 Fuji or Granny Smith apple, cut into matchsticks – 3 sprigs fresh thyme

Direcciones:

Preheat oven to 425°F. Lightly grease a baking sheet.

Slice the sweet potatoes into thick rounds, about 1/4 or 1/3 inch thick.

Place the slices in a bowl and toss with the oil and salt to fully coat. Arrange rounds in a single layer on the prepared pan. Bake for 15-18 minutes, until the rounds are golden and caramelized on the bottom. Allow to cool on the pan for 10 minutes.

Transfer cooled rounds to a serving plate, and top with apple sticks and a bit of Real California blue cheese. Top with fresh thyme leaves and enjoy.
